Main Ingredients

  • 6 tablespoons butter (at room temperature)
  • 1 cup light brown sugar (divided)
  • 3 eggs
  • 1 cup pumpkin puree
  • 3/4 cup quick cooking oats
  • 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 8 ounces Lucerne™ Pumpkin Cream Cheese (at room temperature)
  • 1/2 cup pepitas (pumpkin seeds)
  • non-stick cooking spray

Cooking Instructions

Step 1

Preheat oven to 350º. In a large bowl, with a stand mixer or hand mixer, combine butter and 3/4 cup brown sugar. Add 2 eggs and mix. Add pumpkin puree and mix. In a medium mixing bowl, combine oats, flour, baking soda, baking powder and cinnamon. Slowly  add dry ingredients into pumpkin mixture. Do not over mix. Pour into a parchment paper lined 9 x 9 baking pan. 

Step 2

In a medium mixing bowl, whisk to combine cream cheese, 2 tablespoons brown sugar and 1 egg. Spread on top of pumpkin mixture.

Step 3

In a small bowl spray pepitas with nonstick spray and add 2 tablespoons brown sugar. Spread on top of cream cheese mixture.

Step 4

Bake 35-40 minutes. Let cool. Serve.
