Preheat a large skillet over medium heat.
While the skillet heats up, peel, halve, and slice onions crosswise into thin half-moons.
Once the skillet is hot, add oil and swirl to coat the bottom. Add onions and salt; reduce heat to medium-low and cook, stirring occasionally, until soft and golden, about 20 minutes.
Meanwhile, wash, dry, and mince mushrooms. Place in a medium bowl along with beef, bread crumbs, egg, Worcestershire, salt, and pepper. Mix with your hands until well combined, then form the mixture into 4 equal-sized patties. Place on a plate.
Preheat a grill pan, outdoor grill, or regular skillet over medium-high heat.
Once the pan is hot, add burger patties and cook, undisturbed, until golden underneath, about 5 minutes; flip patties, top with cheese, and cook an additional 5-6 minutes, until cooked through. Remove to a clean plate and loosely cover with aluminum foil.
Meanwhile, wash, dry, and thinly slice tomatoes. Place on another plate, then season with salt and pepper.
When the onions are golden, add vinegar, sugar, and pepper to the skillet. Continue to cook, stirring often, until liquid has reduced, 2-3 minutes. Remove from heat.
Toast buns on the pan, grill, or in a toaster (optional).
To assemble the burgers, spread the bottom half of each bun with mayo, then layer with a cheesy burger patty, tomato, and caramelized onions. Close with the top half of each bun.
To serve, divide burgers between plates and enjoy!
