Wash, dry, core, and halve tomatoes lengthwise. Arrange halves, cut-side down, on the cutting board; make 5 cuts down each tomato, stopping ¼-inch before the bottom (be careful not to slice all the way through).
Working with one tomato half at a time, carefully separate the slices with your fingers, then season with salt and pepper. Transfer seasoned tomatoes to a platter, arranging them flat-side down.
Halve mozzarella lengthwise, then slice crosswise into thin half-moons (you should have 30 pieces). Stuff a mozzarella slice into each cut of the tomato, so that the rounded side of the slice is facing up (each tomato should have 5 slices of mozzarella).

Place oil, balsamic glaze, salt, and pepper in a small bowl; whisk to combine the dressing.
