Preheat oven to 350°F. Line a baking sheet pan with parchment paper.
Peel banana, break into chunks, and place in a medium bowl.
Add sugar, oil, and vanilla to the bowl with the banana. Crush with a fork or potato masher until smooth.
Add coconut and chocolate chips to the bowl; stir to combine.
Place flour, cornstarch, baking powder, baking soda, and salt in a small bowl; stir to combine.
Add flour mixture to the bowl with the banana and stir to combine the cookie batter.
Use a ⅓ cup measure to scoop the batter onto the baking sheet. Using a silicone spatula or the back of a spoon, spread each cookie into a 3-inch circle. Place in the oven and bake until golden around the edges, about 20 minutes. Remove from oven.
Allow cookies to cool slightly and enjoy!
