Preheat a skillet over medium-high heat.
While the skillet heats up, small dice bacon.
Once the skillet is hot, add bacon and cook, stirring occasionally, until crispy, 4-5 minutes. Using a slotted spoon, remove crispy bacon to a paper towel-lined plate. Set aside.
Meanwhile, fill a large pot about halfway with hot water (from the tap); cover and bring to a boil over high heat.
While the water is heating, wash and dry the fresh produce.
Using a clean cutting board, cut cauliflower into 1-inch florets and slice stems into smaller pieces.
Once the water comes to a boil, uncover, then add cauliflower and salt; stir for a few seconds. Cook until tender-crisp, 3-4 minutes. Drain and set aside to cool slightly.
Meanwhile, place mayo, Dijon, vinegar, and spices in a large bowl; whisk to combine the dressing.
Peel and mince shallots. Add to the bowl with the dressing.
Trim and small dice celery. Add to the bowl.
Shave dill leaves off the stems; discard stems and mince the leaves. Add to the bowl, along with the cauliflower, and stir to combine the salad.
Transfer salad to a serving bowl and sprinkle with crispy bacon. Enjoy!
