Preheat a grill pan, outdoor grill, or regular skillet over medium-high heat.
While the pan heats up, wrap each hot dog with a slice of bacon. (If necessary, use toothpicks to secure bacon to the hot dog at each end.)
Once the pan is hot, add hot dogs and cook, turning occasionally, until bacon is crisp and hot dogs are warmed through, 5-7 minutes. Remove to a plate.
Meanwhile, peel and mince shallot. Place in a small bowl.
Wash, dry, and small dice tomato. Add to the bowl with the shallot. Season with salt and pepper, stir to combine, and set aside for serving.
Toast buns on the pan if desired.
Fill each bun with a bacon-wrapped hot dog, then top with lettuce, shallot, and tomato. Drizzle with dressing.
To serve, arrange assembled hot dogs on a platter and enjoy!
