Directions Chicken Enchilada Soup: Ingredients: 1 - Just In Time Gourmet Chicken Enchilada Soup Mix; 1 (14.5-ounce) can diced tomatoes; 1 cup milk; 4 cups water; 1 (12.5-ounce) can diced chicken or 1 cup cooked chicken, shredded. Directions: In a 2-quart (or larger) stockpot, combine soup mix, diced tomatoes, milk and water. Bring to a rolling boil over medium-high heat, then reduce heat and simmer 15-20 minutes, stirring occasionally. Add cooked chicken and heat through about 5 minutes. Serves 8. Serve with tortilla chips, shredded cheese, sour cream and/or diced avocados.
