Mustard-Glazed Pork Chops

Main Ingredients

  • 4 bone-in pork chops (1/2 inch thick each),
  • ⅛ teaspoon salt,
  • ⅛ teaspoon ground black pepper,
  • 2 teaspoons olive oil,
  • 1 large onion, cut in thin wedges,
  • ½ cup apricot preserves,
  • 1 tablespoon Dijon or spicy mustard,
  • ¼ cup water,
  • 1 teaspoon paprika,
  • ½ teaspoon ground nutmeg,
  • Fresh sage leaves (optional),

Cooking Instructions

Step 1

Season pork with salt and pepper. Heat oil in a 12-inch skillet over medium-high heat. Add pork and onion to skillet. Cook 3 minutes; flip pork and stir onions. Cook 3 minutes more.

Step 2

Meanwhile, in a small microwave-safe bowl combine preserves, mustard, water, paprika and nutmeg. Heat in microwave for 1 to 2 minutes or until mixture is melted. Pour over pork in skillet, reduce heat to medium. Cook, covered, 10 minutes or until an instant read thermometer registers 160°F. Divide pork and onion mixture among serving plates; top with sage.
